Seasoning is a thin layer of polymerized oil that protects cast iron and improves release. After cooking, wipe clean while warm, wash with hot water, dry on low heat, and rub on a light coat of oil.
Avoid long soaks and the dishwasher. If rust appears, scrub it off, dry fully, and reseason with a thin oil bake. Over time the surface darkens and performs better.
